"De acuerdo al grosor de la tripa, se distinguen las llonganisses o longanizas, realizadas con el intestino delgado, que suelen consumirse a partir de dos semanas después de la matanza, asadas a las brasas; las culanas o bufetes, que emplean el intestino grueso, que normalmente llevan seis meses de curación antes de su consumo;"
