defended her/his thesis

Generally, "dissertation" and "thesis" are interchangeable, but some countries/institutions make a point of making a distinction between the two, one of them being for PhD and the other for MA and BA (and it could be either way). If you at all know the intended recipient of the translation or at least their country, it might be a good idea to check what they use.
In a non-formal context "thesis" would be more typical in my opinion.
