I think Klappe is a strong possibility. Glatt is a German company, so it could be a translation from German. If they are inlet and outlet valves, the percentages could mean how much they are open by.

or like "clapet" in French - a hinged valve - one of these maybe?

Yes possibly. Whatever it is, seems to be inlet clappe and outlet clappe.

Could it be a loan word from the German "Klappe" meaning valve? Also, I presume that the first term should be "Clappe in entrata" for "inlet"/"entry"...
