I'm translating a list of flours and have this distinction being made. Research tells me that the difference is one of temperature but I can't find any corresponding English terms. Any ideas?

Neapolitan-style pizza
I agree with Helen: "pizza al taglio" refers both to the type (and amount) of flour used AND to the pizza's shape.
Lucky Peach's guide to italian pizzas states that the pizza al taglio's "dough must be made with at least 80 percent highly refined type 00 (doppio zero) flour and up to 20 percent type 0 flour."
The pizza in teglia or pizza al taglio refers to rectangular kind of pizza that you can find everywhere in Rome. So I'd translate it as "Roman-style pizza". I guess the amount of flour is different, but I don't know exactly in which way. Hope that helps!

Usually plate size and served whole, unlike pizza al taglio (in teglia) which is huge and the customer can have as much or little as wanted.

I think pizza al piatto is the round pizza - that fits on a round plate. Pizza in teglia is the one cooked on a large metal oven sheet, then squares are cut of whatever size the customer wants. I can't see why there would be a difference in the kind of flour used - unless the round pizzas are the Neapolitan kind that uses a different kind of dough.
