Nello specifico è in realtà un sinonimo di "sporco" nelle macchine per la pulizia industriale:
"Le macchine di lavaggio realizzate nei primi anni 80 hanno performato piuttosto bene nel settore delle contaminazioni fresche (industria delle macellazione, produzione salumi freschi, lavaggio cassette prodotti freschi,…) ma spesso erano insufficienti per contaminazioni complesse come quelle polimerizzate, disidratate, carbonizzate o comunque modificate. "

You are probably right, Lionel. But there's not much that is easy to understand in this field and many others. This is why I have to research so much stuff. Nothing comes easy to me.

Settore delle contaminazioni fresche Please don't concern yourself with "settore delle contaminazioni", it's just plain bad Italian. It is simply short for "settore in cui avvengono contaminazioni fresche", this is typical of "technical" Italian, words are omitted at will.

Liz, I'm not sure that a dictionary is enought to translate; otherwise we may have to find another job.
The point here, is that we are not talking about "bacterial contamination" as pointed out by Francesco, but simply about "dirts" present after cleaning. These are two different concepts and of course I could be wrong, but in Italian "lo sporco" is not a "contamination", nor "dirts" are contamination in English BTW.

Liz Please read "settore" as "about".
ie. about/regarding/when considering/talking about/when addressing.........the presence of fresh residues.....

In Italiano, come in Francese, la parola "contaminazione" non a sempre una connotazione di "pericolo biologico" come la interpresto in Inglese (ma forse mi sbaglio).
Tuttavia vedo che l'asker fa chiaramente riferimento a "SPORCO"
Quello che capisco qui è che, dopo lavaggio, vi sono dei residui di cibo ancora presenti. Essi sonno "igienicamente" inaccettabili, ma non “biologicamente pericolosi”. Quindi non userei la parola “contamination” che fa pensare a agenti patogeni o prodotti chimici, ma piuttosto semplicemente a “residues”.

agree dandamesh : il senso è quello che dici tu ma sarebbe meglio parlare di "food residues", altrimenti potrebbe essere intertretato come residuei negli alimenti, tipo pesticidi. La seconda frase è più complessa e va ristrutturata, forse con deposits
