OK, maybe it means... ... there is one very big field, and it is being used like this:

3 volleybalvelden in de breedte of 1 centraal gelegen volleybalveld =
3 volleyball fields across the width of the larger field or 1 centraly located volleyball field

1 trainingsveld in de breedte of 1 centraal gelegen veld voor wedstrijden =
1 training field across the width of the larger field or 1 centrally located field for competitions

Obviously just guessing like you.

I thought "side by side was most appropriate until I came across this:

1 trainingsveld in de breedte of 1 centraal gelegen veld voor wedstrijden??? 1 training field “side by side”???

indeed. I was working on a patent application when I answered it, so the first thing I thought of was "widthwise", but side by side is obv. better ;-)
