The sentence reads: "Giet 2/3 van de chocolade op een marmer, en bewerk deze tot de chocolade lichtjes indikt."
But surely I cannot translate "een marmer" as simply "a marble"? Perhaps the meaning is "a marble surface"...
Incidentally this is a Flemish text.

It has to do with tempering chocolate. I think marble is used because it is a cool surface, and the temperature is very important when working with chocolate.

: I actually prefer this way of saying it as it does not imply that an extra piece of marble should be taken to the place where the chocolate is tempered. The main thing is that the surface must be marble.
