Nederlands term

But surely I cannot translate "een marmer" as simply "a marble"? Perhaps the meaning is "a marble surface"...
Incidentally this is a Flemish text.
Thanks for any help on this!

Discussion

Dave Greatrix Apr 27, 2011:
@Kirsten. Marble is used for tempering, primarily because of its cooling property, chocolate will stick to marble, but the chocolatier removes it from the marble before it is totally hard. He or she then moulds or shapes the chocolate further.

Dave Greatrix Apr 26, 2011:
As Fiona rightly says, this is a way of tempering chocolate - So nothing to do with cakes or moulds.
Talitha Wilsnagh Apr 26, 2011:
Problem is, it can be a marble cake or mould. I don't think you'll simply pour chocolate onto a marble surface.

marble slab

It has to do with tempering chocolate. I think marble is used because it is a cool surface, and the temperature is very important when working with chocolate.

Dat denk ik ook, juist omdat er "een" voor staat.

a marble surface

as you indicated
Peer comment(s):

agree Kirsten Bodart : I actually prefer this way of saying it as it does not imply that an extra piece of marble should be taken to the place where the chocolate is tempered. The main thing is that the surface must be marble.

an untensil to mix white and black chocolate

gemarmerd means marbled
Peer comment(s):

disagree Dave Greatrix : This is clearly to do with tempering of chocolate, "OP een marmer".
