middle piece
According to a multi-lingual horse dictionary I found, it's middle piece. Middle-piece with a hyphen seems to be possible as well.
Example sentence:
The middle-piece of a Clydesdale should be big and well sprung at the ribs, a flat-sided specimen of the breed being objected to by most judges.

: Yes, the terms are used in the judging of show animals and not in the meat trade. Forequarter, middle piece and hindquarter.

Skinner’s – Baldev Starlet : Close up to winner, this tri has a pleasing head, I would prefer a darker eye, super forehand, body and hindquarters. Moved soundly.
